fruit candying monoblock; machines for preparing, candiing the product and regenerating the mixture

The candying unit is made up of an AISI 304 stainless steel tank equipped with a scraper blade and heating on the bottom for the preparation of the mixture and its regeneration. The tank is insulated with low thermal conductivity insulating material and is equipped with tray holder baskets drilled and removable and positioned in such a way that when the product is floating, it will not be able to get out and disperse in the tank. A pump keeps the mixture in continuous movement during the heating phase. The treatment temperature of the mixture is maintained with hot water which circulates in the honeycomb cavity of the tank and is accumulated heated by a group of resistances.

The tub looks like a monoblock equipped with:

  • Flip lid Vacuum pump for the preparation of the mixture to avoid the caramelization of the sugars and, in the fruits that allow it, also carry out the candying in vacuum 
  •  Mixture loading and unloading system and automatic recycling 
  •  Trolley for basket support
  •  Mechanical tilting system of the bowl for total draining of the bowl 
  •  PLC for work cycle management
