The candying unit is composed of an AISI 304 stainless steel tank equipped with a scraper blade and heating on the bottom for the preparation of the mixture and its regeneration. The tank is insulated with insulating material with low thermal conductivity, it is equipped with tray racks perforated and removable and positioned in such a way that during the floating phase of the product, it will not be able to go out and disperse in the tank. A pump keeps the mixture constantly in the heating phase. The treatment temperature of the mixture is maintained with hot water which circulates in the honeycomb cavity of the tank and is heated by accumulation by a group of resistances. de résistances.
